Lemon & Coconut Energy Balls

Who doesn’t love a super easy to make energy ball recipe that you can snack on without feeling guilty?! These ridiculously nutritious balls of energy are full of protein, good fats, carbs, vitamins, minerals, antioxidants and anti-inflammatories that you can enjoy whenever you feel like a little treat. They are the perfect snack to take to work, for after a workout or when you’re on the go.

The original recipe was given to me by one of my beautiful clients, but I have just added a few extras to this recipe to change them up and make them my own. When I shared this recipe on my Facebook page about a year ago everybody loved them and I hope you do too.

Perfect to make on a weekend ready for your busy week ahead, it will literally take you 20 minutes to make these no-bake snacks. One of the best things with recipes like this is you can easily swap or change the ingredients around to make it your own too and to work with whatever ingredients you have in the pantry.

These energy balls freeze beautifully and are delicious straight out the freezer, or leave a few out to thaw for 10-15 minutes.

Lemon & Coconut Energy Balls Recipe


1 cup shredded coconut

1/2 cup plain protein powder (I prefer to use plant protein powders)

1 cup almond meal

60g coconut oil

50g honey

40g chia seeds

20g goji berries

10g sesame seeds

Juice and rind of 1 – 2 lemons (depending how juicy the lemons are and how lemony you want them)

Splash of vanilla essence

Extra shredded coconut or sesame seeds for rolling


Mix all ingredients together in a blender or Thermomix, and blend until well combined. Roll into bite sized balls and roll through either shredded coconut or sesame seeds.

Keep in fridge or freezer until all gone (Warning: they may not last long)!
